Get: - 2 cans kidney beans
- 1 lbs ground pork or turkey
- 1 can green chilis
- 2 cans peeled tomatoes (consider the "fire roasted" kind)
- 1 medium yellow onion
- 4 fresh tomatoes, chopped (only if they're decent)
- 4-8 cloves garlic, coarsely chopped
- 12 floz of a lager beer (shiner boch, red stripe, etc) and/or bourbon
- 1 jalapeno, minced (or 1 serano chili)
- a LOT of chili powder: like many tablespoons.
- salt to taste
- acid to taste: lemon juice or balsalmic vinegar? 1-2 tbsp?
- spices to taste: black pepper, cumin, oregano, thyme, cinnamon, bay leaf, paprika, chipotle, red pepper flakes, garlic powder, onion powder.
- toppings:
- corn chips (or corn bread instead, see below)
- cheddar cheese, shredded
- sour cream
- chopped green onion
Do: - brown the turkey in olive oil with salt, pepper, and chili powder
- soften onions and garlic in olive oil, salt, pepper, and chili powder
- add cans of tomato (DONT drain) and cans of beans (DO drain) and cans of green chili
- add beer and/or bourbon
- flavor with all spices, as a starting point.
- cover and simmer for at least 1 hour, up to 8 or more also fine! Consider using hot plate!
- Stir occasionally, don't let it get to a rolling boil, and definitely don't let the liquid cook all the way off.
- Turn off the heat, let stand 5 minutes to cool, and then do final taste tune for salt, acid, spices.
- Stir in a little cheese or sour cream for richness.
- Serve with toppings.
Results: - The meat seemed cooked to death? "Low" on our stove was too hot, try a lower simmer, or use the hotplate!
- A little too much cinnamon? It mellowed during cooking, but I wish I had used less.
- A bit too acidic! I was surprised at the bite, maybe a little too much lemon. Or maybe balsalmic instead?
- Lacked richness at the end, maybe needs more fat? Stirring in some cheese or cream might help.
