Tomato bean soup with grilled cheese

Get:
  • jack + cheddar cheese
  • butter
  • bread
  • 1-3 tbsp of butter (or more)
  • 2 cans diced tomato
  • 1 can cannelloni beans
  • 3 fresh roma tomatoes
  • 2 yellow onions
  • 2-3 cups chicken stock
  • garlic
Do:
  • coarsely chop onion
  • in a soup pot, soften onion in butter over medium heat
  • season with salt and pepper as desired
  • add cans of diced tomato with juice; don't drain the cans
  • add can of beans after draining the syrup goo
  • add the chicken stock
  • dice romas and add to pot
  • season to taste: onion powder, garlic powder, oregano, thyme, oregano, basil, parsley, chili, cayenne
  • simmer indefinitely
  • blend
Grilled cheese:
  • slice bread
  • slice cheddar cheese
  • butter outsides of slices of bread
  • in a large skillet, lay out sandwiches of bread and cheese, butter-side out
  • grill until golden brown
Results:
  • I added cream instead of beans and the soup came out kinda bland. You can't cut the tomato too much or else there's no tang left.
  • The grilled cheese was good and greasy :3
