Thanksgiving ham

We do this on the grill to save oven space.

Get:
  • Some large ham, bone-in. 12 pounds was enough for 30-some people as a second main.
  • Hormel from grocery store is "fully cooked" and you can just eat it cold if you want.
  • Reheating can be whatever since its fully cooked. Recommends 140F, but can be less.

Do:
  • Unpackage ham
  • Meez the ham at room temperature for 90 minutes before roasting
  • Score the ham with a knife (?) 1cm cuts
  • Put remote thermometer into ham
  • Cover with foil, place on raised grill in roasting pan with a bit of water in the pan
  • Preheat oven / grill
  • Cook to 130F internal temp
  • i didn't bother with the glaze, it doesn't need it

2019 Notes:
  • Bought  10 lb shitty safeway spiral cut ham, fully cooked. It was fine.
  • Cooked on the grill on high for 15 mins to scorch, then on low grill for like 2 hours.
  • Internal temp never got up above like 90-100, so it didn't get to 120 or anything.
  • It tasted fine without any glaze. Just a ham.

2018 Notes:
  • Bought 10 lb uncured applewood smoked Niman Ranch ham from Zonottos. $71.
  • Niman's recommended Instructions : roasting times / temps tho this is with glaze, which I don't use:
    • Bake 60 minutes at 350F, covered
    • Baste
    • Bake 60 minutes at 300F, uncovered
    • Baste
    • Bake 30 minutes at 300F, uncovered
  • Bake time was bout 2 hours to get to 130F
  • It didn't taste particularly great! The ham was moist but a bit lunch-meat-y, probably could have cooked it hotter.


2017 Notes:
  • Next year get a better ham, like a "honey baked" which i guess is a store you go to?
  • Cooked to 137F it was fine, but could have gone lower.
