Steinbeck's lentil soup



Get

  • 1lb chicken thighs

  • 4c chicken broth

  • 1/2c frozen corn

  • 1 package frozen spinach

  • 1/2c dry brown or green lentils

  • 1 14oz can whole tomatoes + juice, cut with scissors

  • 1 diced medium yellow onion

  • 3 diced garlic cloves

  • 1 tsp cumin

  • red chilli flakes to taste

  • Chilli powder to taste

  • Salt + pepper

  • Cooked rice for serving

Garnishes:

  • Avocado, jalapeno slices, lime wedges, cheese


Do:

Put everything (except rice + garnishes) in instant pot, stir to combine. Cook for 12 minutes on "high". Vent immediately. Pull out any large pieces of chicken and shred with two forks on a cutting board, and return to pot. Serve over rice with garnishes and lime juice.
