Sous-vide pork chops with almond-pear tapanade

Get:
  • 2 pork chops
  • 1/4 cup of roasted almonds, minced
  • 1/4 of a bosc pear, minced
  • honey
  • bourbon
  • ginger powder
Do:
  • season pork with salt, pepper, thyme, garlic powder, onion powder
  • sous vide at 137 for 2-3 hours
  • Combine minced pear, minced almond, a squirt of honey, a dash of bourbon, and ginger powder in a bowl
  • Sear 1 minute per side
  • serve with tapanade
