Get: - 1 lb pork loin (serves two)
- lemon juice (from lemon)
- powdered cacao
- 4 small fresh tomatoes (two per person)
- shallot, minced
- rub spices: salt, pepper, cinnamon, cumin, garlic powder, onion, chili powder, cayenne powder, cilantro
Sauce: - saute minced shallot in sizzling olive oil with black pepper
- add diced tomato (or halved cherry tomatoes)
- add lemon juice, vinegar, and all rub spices
- simmer and serve
Loin: (not brined!)- coat loin with spices, especially salt (liberal, except for the cinnamon)
- sous-vide at 137F for 2-3 hours
- sear on high heat for 1-2 minutes in a skillet (with butter or olive oil)
- slice and serve with rice and veggies
Results: - Good! Not too dry, though could use a bit of sauce.
- Sauce was tangy, and a little goes a long way; the tomato sort of obliterates flavor so definitely you want it on the side.
- Could probably sear for more than 1 minute, would still be good. There wasn't a lot of sear on the outside at 1m.
