Slider buns

  • 1/4 cup warm water
  • 3/4 tbsp yeast (probably 1tbsp is fine)
  • 3 tbsp melted butter
  • 2/3 cup warm milk
  • 1 egg
  • 1 pound (a bit over 3 cups) flour
  • 2.5 tbsp sugar
  • 1/2 tbsp salt
  • some olive oil
  • 1 egg white
  1. Stir the yeast into the water in the mixing bowl and let it sit for 10 minutes to get foamy.
  2. Whisk the butter, milk, and egg together in one bowl. Mix the sugar, salt, and flour together in another. Then stir both bowls into the yeast water.
  3. Use the mixer to knead the dough for 8 to 10 minutes.
  4. Oil the inside of a bowl "generously", then move the dough into the oiled bowl. Roll it around until it's an oil-covered sphere, then cover with a wet towel for 1.5 hours to double.
  5. Cover a baking tray with parchment paper. Punch down the dough, and transfer it to the tray. Flatten and spread it with your hands until you get a rectangle that's twice as long as it is wide.
  6. Use the dough cutter to make 2 long slices and 5 short ones, so you get about 18 square-ish things.
  7. Cover loosely with a towel for another 30 minutes. Preheat the oven to 375F.
  8. Just before baking, mix 1 egg white with 1 tbsp water and brush the top of the dough with it, so you get a brown top.
  9. Bake for about 30 minutes. (The original instructions said 15 minutes which is laughable.) The tops will be brown.
