- 1/4 cup warm water
- 3/4 tbsp yeast (probably 1tbsp is fine)
- 3 tbsp melted butter
- 2/3 cup warm milk
- 1 egg
- 1 pound (a bit over 3 cups) flour
- 2.5 tbsp sugar
- 1/2 tbsp salt
- some olive oil
- 1 egg white
- Stir the yeast into the water in the mixing bowl and let it sit for 10 minutes to get foamy.
- Whisk the butter, milk, and egg together in one bowl. Mix the sugar, salt, and flour together in another. Then stir both bowls into the yeast water.
- Use the mixer to knead the dough for 8 to 10 minutes.
- Oil the inside of a bowl "generously", then move the dough into the oiled bowl. Roll it around until it's an oil-covered sphere, then cover with a wet towel for 1.5 hours to double.
- Cover a baking tray with parchment paper. Punch down the dough, and transfer it to the tray. Flatten and spread it with your hands until you get a rectangle that's twice as long as it is wide.
- Use the dough cutter to make 2 long slices and 5 short ones, so you get about 18 square-ish things.
- Cover loosely with a towel for another 30 minutes. Preheat the oven to 375F.
- Just before baking, mix 1 egg white with 1 tbsp water and brush the top of the dough with it, so you get a brown top.
- Bake for about 30 minutes. (The original instructions said 15 minutes which is laughable.) The tops will be brown.
