Sizzling rice soup

Get:
  • some medium grain rice, rinsed
  • Water chestnuts, sliced
  • shrimp, peeled
  • 20 floz garlic chicken stock
  • 1 tbsp rice wine / dry sherry
  • 1 tbsp soy sauce
  • shitake mushrooms, stems removed, sliced
  • handful of snow peas, chopped into thirds
  • 5 drops of sesame oil
  • salt, pepper, powdered ginger, garlic powder, onion powder

Do:
  • Rice:
    • Steam the rice per package instructions
    • Spread rice on a cookie sheet, very thin layer, like 0.5cm or less
    • Bake at 300F for one hour, turning once, until crispy
    • Cut into squares
    • Deep fry squares until puffed, VERY fast, like less than 30 seconds
    • remove to a paper towel and pat dry excess fried oil
    • and serve in the soup
  • Soup:
    • Simmer the broth and flavor with the seasonings.
    • The water chestnuts stay crisp forever, so you can put them in whenever.
    • THIS SOUP COOKS VERY FAST! Don't put anything in it until ready to serve. I'd suggest frying the rice squares ahead of time
    • Put the mushrooms and water chestnuts in at T-10 minutes
    • Put the shrimp in at T-4 minutes
    • Remove from heat
    • Add the green onion and snow peas, and serve
    • Add the crispy rice in each bowl

Results:
  • snow peas way way overcooked! Putting them in 5 minutes ahead was still way too much. I'd basically put them in in the last 30 seconds at most, with no heat.
  • shrimp went in at 4 minutes, and it wasn't that overcooked. fine to do that
  • water chestnuts were nice
  • flavor was generally okay but dominated by the snow peas.
  • the shitake was also overcooked! i wouldn't simmer them for 20 minutes. maybe more like 5.

  • the puffed rice really actually needs true deep frying. it worked great when it hit the oil, but the rest of it didn't actually cook.
  • also don't brown

  • fried sticky rice balls - needs more bacon, needs more soy, maybe rice vinegar.
