Get: - 1lb jumbo shrimp, frozen bag (comes in 2lb bag from safeway FYI)
- 1 cucumber, peeled and very finely minced
- 1/2 red onion, finely minced
- juice of meyer lemons
- 1 serrano pepper, seeds removed and finely minced
- lime juice
- red wine vinegar
- avocado
Do: - Prepare shrimp:
- defrost for 5 minutes in cold water, then peel
- pat dry with paper towel, then toss in olive oil, salt, pepper, garlic powder, etc
- sear in pan for 1-2 minutes per side
- move to plate and chill in refrigerator to stop cooking
- Prepare ceviche:
- combine minced cucumber, minced onion, minced serrano
- add vinegar, lemon juice, lime juice, and a bit of olive oil
- pepper, salt, spice, etc
- coarsely chop shrimp and add to mixture
- refrigerate
- add avocado at the end and don't mix too much
- Eat with fried tortilla chips
Results: - Competent. I used a full serano per 4 people for adequate heat. Got some complements. avocado and olive oil help cut the citrus.
- Variant, I made this as a salad instead of as a bowl appetizer and it was also good!
