seared tuna

Get:
  • sushi grade ahi, 1" thick or more
    • Can be had from zanatto's counter, strangely shrink-wrapped or
    • Cap'n Willis in ENC, or
    • Whole food fish counter
  • olive oil
  • lemon juice, or use sesame oil if doing sesame seared
  • spices
Do:
  • rinse the fish in a trickle of water
  • put oil and lemon juice (or sesame oil) on plate, salt and pepper
  • lay fish in oil, all sides
  • season the fish with salt, pepper, garlic powder, onion powder (not sesame seeds, they burn)
  • Grill method:
    • Clean the grill
    • Brush with olive oil
    • Run the grill up to high for 10-15 minutes
    • Sear the fish for 90-120 seconds per side. Less time for a thinner cut.
  • Pan sear method:
    • put olive oil in a skillet over high heat
    • when hot, lay fish in pan
    • approximately 45 seconds per side for a thin cut.
  • remove to cutting board
  • slice carefully with very sharp knife, and serve

Notes:
  • the pepper seemed too fine from the mill, so it was either under-peppered or the pepper should have been more coarse
  • i thought it was maybe a little bit under-salted.
  • could not taste the sesame at all, although robey said he could. i also noted that the sesame burned when it hit the pan
  • i did not love the fish, it seemed a bit gamey.  If this really really matters, next time try Whole Foods
