Get: - 0.5lb cheese tortellini, frozen
- 0.5lb spicy italian sausage, crumbled
- 3 gloves garlic, coarsely chopped
- 1 shallot, coarsely chopped
- 1 yellow onion, chopped
- 1 zucchini, sliced into 0.5cm thick quarter-rounds
- 1 pint grape tomatoes, halved
- white wine
- balsamic vinegar
- Seasoning: sage, thyme, marjoram, oregano, basil, ground black pepper, white wine, lemon juice, 1tsp salt
- 6oz tomato paste, mixed 2:1 with filtered water
Do: - Meez all ingredients
- Mix all spices into the tomato paste
- In a large pan with a lid, brown the sausage on medium+ heat, 5ish minutes
- Set sausage aside.
- Brown zucchini in the sausage grease on medium-high, 2-3 minutes
- Set zucchini aside.
- Add a slash of olive oil if there's not much grease
- Sautee the onion, garlic, and shallot until softened
- Add a generous splash (0.5c?) of white wine and stir to deglaze
- Add all ingredients except the tortellini, bring to a simmer over medium heat
- Once simmering, reduce heat to medium-low and cover
- Simmer for at least 20 minutes covered, more is better, up to an hour or two.
- Add frozen tortellini directly to sauce
- Bring back to a simmer over medium heat
- Simmer covered for 6-7 minutes, until tortellini is cooked through
Results: - Tasty! Simmering a long time is probably good? But also very important to tune at the end. It's usually under-salted.
- I think the balsamic vinegar does a lot. Great flavor add.
