sausage marinara with tortellini

For two.

Get:
  • 0.5lb cheese tortellini, frozen
  • 0.5lb spicy italian sausage, crumbled
  • 3 gloves garlic, coarsely chopped
  • 1 shallot, coarsely chopped
  • 1 yellow onion, chopped
  • 1 zucchini, sliced into 0.5cm thick quarter-rounds
  • 1 pint grape tomatoes, halved
  • white wine
  • balsamic vinegar
  • Seasoning: sage, thyme, marjoram, oregano, basil, ground black pepper, white wine, lemon juice, 1tsp salt
  • 6oz tomato paste, mixed 2:1 with filtered water
Do:
  • Meez all ingredients
  • Mix all spices into the tomato paste
  • In a large pan with a lid, brown the sausage on medium+ heat, 5ish minutes
  • Set sausage aside.
  • Brown zucchini in the sausage grease on medium-high, 2-3 minutes
  • Set zucchini aside.
  • Add a slash of olive oil if there's not much grease
  • Sautee the onion, garlic, and shallot until softened
  • Add a generous splash (0.5c?) of white wine and stir to deglaze
  • Add all ingredients except the tortellini, bring to a simmer over medium heat
  • Once simmering, reduce heat to medium-low and cover
  • Simmer for at least 20 minutes covered, more is better, up to an hour or two.
  • Add frozen tortellini directly to sauce
  • Bring back to a simmer over medium heat
  • Simmer covered for 6-7 minutes, until tortellini is cooked through
Results:
  • Tasty! Simmering a long time is probably good? But also very important to tune at the end. It's usually under-salted.
  • I think the balsamic vinegar does a lot. Great flavor add.
