Sausage linguine

  • 1 jar Safeway organic marinara
  • 1 whole yellow onion, coarsely chopped
  • 1 shallot, finely minced
  • 1 sprig fresh rosemary, finely minced
  • 3 zuchinni, halved, 1cm slices
  • 5 fresh italian sausage links, skins peeled

  1. start the red sauce at a simmer
  2. start the shallot with olive oil in a skillet
  3. slice the sausage into chunks 1/2 inch thick or less, and brown in a skillet
  4. add sausage to sauce when browned
  5. saute the onion in the same pan, transfer to the sauce once softened
  6. saute the zuchinni in the same pan, transfer to the sauce once softened
  7. simmer indefinitely
  8. serve with noodles and/or bread
