- 1 jar Safeway organic marinara
- 1 whole yellow onion, coarsely chopped
- 1 shallot, finely minced
- 1 sprig fresh rosemary, finely minced
- 3 zuchinni, halved, 1cm slices
- 5 fresh italian sausage links, skins peeled
- start the red sauce at a simmer
- start the shallot with olive oil in a skillet
- slice the sausage into chunks 1/2 inch thick or less, and brown in a skillet
- add sausage to sauce when browned
- saute the onion in the same pan, transfer to the sauce once softened
- saute the zuchinni in the same pan, transfer to the sauce once softened
- simmer indefinitely
- serve with noodles and/or bread
