- 1 tsp dry yeast
- 3/4 cups warm water
- 1.5 (1) tsp sugar
- 1 tsp salt
- 1.5 tsp melted butter (not hot) or possibly 2 tbsp
- 2 cups flour
- 2 tbsp
- water, sugar, yeast -> bowl. stir. set aside for 5 min to foam.
- stir in flour, salt, melted butter.
- mixer for 5 minutes. it should be springy and not sticky. then rest for 10 - 60 minutes.
- you can fridge it for a day here.
- preheat oven to 450f.
- fill a wide or deep pan with 9 cups of water. stir in 1/2 cup baking soda. bring to boil.
- chop into 4 pieces, hand roll out to about 2 ft long, thin, form into pretzels.
- cook each pretzel in boiling water for 30 seconds, then extract with slotted spoon to cookie sheet.
- sprinkle the pretzels liberally with rock salt.
- oven for 15 minutes.
- cool for 5 minutes.
notes: - that was too much flour. try 1 3/4 cups. - make the rolled-out dough long and thin. it rises a lot in the oven.
