Potato salad

  • 2 potatoes
  • 2 eggs
  • 1/4 cup mayo
  • 1/4 cup dill relish
  • 2 tbsp brown mustard (optional)
  • 1 tbsp finely diced jalapeño or pepperoncini (optional)
  • 2 tbsp vinegar
  • 1 tsp salt
  • paprika (optional)
  1. slice the (unpeeled) potatoes into 3/4" chunks, drop them into a pot of salted water, bring to a boil, and boil for 10 minutes.
  2. hard boil the eggs: put in cold water and bring to a boil, then turn off heat, cover, and leave sitting in the hot water for 12-15 minutes.
  3. run the eggs & potatoes through cold water. ideally, fridge them for an hour or two.
  4. slice the (peeled) eggs into 1/2" chunks.
  5. stir all the non-paprika ingredients together. then stir into potatoes and eggs.
  6. sprinkle paprika over the top if you like.
  7. fridge the whole thing for an hour or more if possible.
next time
  • chop the potatoes before boiling. they didn't cook through.
  • i didn't taste much besides mayo.
  • another recipe adds 2 tbsp white vinegar: try that!

  • (not yet attempted, but got this idea from Naschmarkt)
  • boil potatoes, remove still somewhat firm
  • sliced cucumbers
  • marinate in white wine vinegar, dill, and salt
  • drain and serve
