- 2 potatoes
- 2 eggs
- 1/4 cup mayo
- 1/4 cup dill relish
- 2 tbsp brown mustard (optional)
- 1 tbsp finely diced jalapeño or pepperoncini (optional)
- 2 tbsp vinegar
- 1 tsp salt
- paprika (optional)
- slice the (unpeeled) potatoes into 3/4" chunks, drop them into a pot of salted water, bring to a boil, and boil for 10 minutes.
- hard boil the eggs: put in cold water and bring to a boil, then turn off heat, cover, and leave sitting in the hot water for 12-15 minutes.
- run the eggs & potatoes through cold water. ideally, fridge them for an hour or two.
- slice the (peeled) eggs into 1/2" chunks.
- stir all the non-paprika ingredients together. then stir into potatoes and eggs.
- sprinkle paprika over the top if you like.
- fridge the whole thing for an hour or more if possible.
next time
- chop the potatoes before boiling. they didn't cook through.
- i didn't taste much besides mayo.
- another recipe adds 2 tbsp white vinegar: try that!
austrian recipe idea - (not yet attempted, but got this idea from Naschmarkt)
- boil potatoes, remove still somewhat firm
- sliced cucumbers
- marinate in white wine vinegar, dill, and salt
- drain and serve
