Grill-Fired Pizza

Get:
  • Everything for Pizza dough
  • olive oil
  • mozerella cheese, shredded
  • toppings! can be anything, but we like:
    • hot italian sausage, crumbled and sauteed
    • fresh red onion, sauteed for a couple minutes
    • mushrooms and onions, sauteed for a couple minutes
    • pickled jalapenos
    • fresh red bell pepper
    • heirloom tomato
  • sauce:
    • 1 can tomato paste (6 oz)
    • 0.75c warm water
    • 1-3 fresh garlic cloves, pressed
    • spices (oregano, basil, thyme, onion powder, salt, pepper)
    • warm on the stove on low to bring out the garlic

Do:
  • Prepare dough a couple hours ahead (see Pizza dough)
  • Brown the sausage, set aside
  • Brown the mushrooms and onions
  • Prepare any other ingredients, e.g. chop onion, pepper, tomato
  • Prepare sauce by thoroughly mixing tomato paste, water, pressed garlic, and spices
  • Roll out dough on flour-dusted board, fold edge into crust
  • Place pizza on 12" pizza pan
  • Preheat grill to max (literally no temperature too high), to at least 550F
  • Brush 1tbsp-ish of olive oil onto dough
  • Smear sauce onto dough Not too much!
  • Add cheese; internet consensus is cheese first then toppings
  • Place ingredients on pizza
  • Transfer pans to grill
  • Bake for 4-8 minutes at least 550F

Results:
  • The pizza pans are critical! Its not possible to scoop or slide the pizzas, even with a spatula.
  • So much food!
  • We tried making a little calzone tart and that was yummy, and very easy. We should try making that next time.
  • When grill doesn't have much gas left, it doesn't get super hot. Only made it to about 500F. 600F is reachable when the gas bottle is in good shape.
