Pancakes

    Delicious pancakes.

    These go well with the saute'd apples as a topping.
    • 1 1/2 cups flour
    • 2 tbsp baking powder
    • 1/2 tsp salt
    • 1 tbsp white sugar
    • 1 1/4 cups milk
    • 1 egg
    • 3 tbsp butter
    • "splash" of vanilla
    1. Melt the butter in a small pan.
    2. In a large bowl, sift together the flour, baking powder, salt and sugar.
    3. In a smaller bowl, mix the egg and milk. Zap them for 30-60 seconds to bring them up to room temperature, then mix in the butter and vanilla.
    4. Dig a small well in the large bowl of powder, and pour/whisk the wet ingredients together until smooth. It may also help to let the mix sit for 10 minutes afterwards.
    5. Cook on a buttered griddle. Makes about 6 large pancakes.

    For two people, maybe 2/3 the above:

    • 1 cup flour
    • 1 tbsp baking powder
    • 1/4 tsp salt
    • 2 tsp white sugar
    • 1 cup milk
    • 1 egg
    • 2 tbsp butter
    • "splash" of vanilla
