By Robey Delicious pancakes. These go well with the saute'd apples as a topping. - 1 1/2 cups flour
- 2 tbsp baking powder
- 1/2 tsp salt
- 1 tbsp white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tbsp butter
- "splash" of vanilla
- Melt the butter in a small pan.
- In a large bowl, sift together the flour, baking powder, salt and sugar.
- In a smaller bowl, mix the egg and milk. Zap them for 30-60 seconds to bring them up to room temperature, then mix in the butter and vanilla.
- Dig a small well in the large bowl of powder, and pour/whisk the wet ingredients together until smooth. It may also help to let the mix sit for 10 minutes afterwards.
- Cook on a buttered griddle. Makes about 6 large pancakes.
For two people, maybe 2/3 the above:
- 1 cup flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 2 tsp white sugar
- 1 cup milk
- 1 egg
- 2 tbsp butter
- "splash" of vanilla
