Paella

Get:
  • chorizo next time!
  • 1lb cherry tomatoes, chopped except for a few for garnish
  • 1 onion
  • 6 cups broth at 200F
  • 2 cups rice
  • 2lbs chicken
  • ~20 threads saffron
  • chili powder / paprika and other spices
  • 1 tbsp olive oil
  • 0.5lb green beans, chopped into 2cm pieces
  • 1 chopped red bell pepper
  • 1 chopped yellow bell pepper
  • 4 cloves garlic

Do:
  • brine and then season the chicken
  • preheat oven to 425F
  • combine the rice, saffron, rosemary, 1tsp salt, chili powder dry in a mixing bowl
  • place the paella pan on a range
  • sear the chicken in olive oil, 5 minutes per side until brown
  • move the chicken to the side
  • saute the green beans, peppers, onions, and garlic in the center of the pan, cook until darkened (2-3 mins)
  • reserve 5-7 cherry tomatoes for roasting
  • chop or pulp the rest of the tomatoes
  • add the tomatoes and cook until thickened, 5 minutes
  • add the rice mixture and stir constantly for 1 minute
  • move chicken onto the rice
  • add half the stock and stir to evenly mix the rice
  • don't stir after this, though you can shake the pan to encourage settling
  • cook until absorbed, 9 minutes, in the oven at 425F-450F
  • add the rest of the stock and cook until absorbed, 9 more minutes
  • cook until the rice is done, adjust the pan as needed. probably 30 minutes total?
  • sear on the stove for 1-2 minutes
  • remove heat, let stand 5 minutes and serve

Results:
  • good! the stock did absorb, though it was borderline too much liquid. it finishes absorbing as it cool
  • saffron was the dominant flavor borderline too much saffron. I didn't measure, i used a lot. use maybe the exactly 20 threads next time.
  • the recipes call for tomato puree basically; elaborate tomato grating. i didn't do any of that and it was fine? try more tomato next time.
  • chili / paprika was pretty weak, could use more of that.
  • the recipes are all for grills and charcoal, I thought the oven was fine though.
  • the chicken survived but it wasn't great. internal temps got to 200F. perhaps next time i could pull them out and put in only at the last 15 minutes?
