Oat muffins

Get

  • 1 cup rolled oats
  • 1 1/4 cup flour
  • 1/2 cup sugar (brown sugar preferred)
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1 cup milk
  • 4 tbsp melted butter
  • 2 large eggs
  • 1 tsp vanilla extract

Do

  1. preheat oven to 425 F. grease the holes in a 12-hole muffin tin.
  2. mix the wet ingredients (milk, butter, eggs, vanilla) together until uniform.
  3. mix the dry ingredients (oats, flour, sugar, salt, baking powder) together in a bigger bowl.
  4. pour the wet into the dry and stir for about 20 seconds to get everything wet. it will be lumpy. that's ok. walk away!
  5. fill each cup 2/3 to 3/4 full.
  6. bake for 15-20 minutes, until a toothpick comes out clean.
  7. cool on a rack.

  • Tasty but plain -- add diced fruit or something.
  • Don't use paper cups. Grease the muffin holes.
  • Make half as many. 12 is a lot.
