makes about enough for 2 people, about 1 hour
- 4 button mushrooms, sliced (about 1.5 cups)
- 1/2 onion, diced into large pieces
- 2 tbsp butter
- 2 tbsp flour
- 2 cups stock (chicken ok!)
- Melt the butter in a saucepan over medium heat until it starts bubbling.
- Stir in the mushrooms and onions, and saute them until they soften and dry out, about 15 minutes.
- Stir in the flour, and saute for another 5 minutes.
- Pour in a bit of the stock, stir it vigorously until everything is incorporated, then add the rest.
- Add any extra seasonings you want. Reduce to medium low and simmer until it thickens, about 30 minutes.
