Mushroom gravy

makes about enough for 2 people, about 1 hour

  • 4 button mushrooms, sliced (about 1.5 cups)
  • 1/2 onion, diced into large pieces
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups stock (chicken ok!)
  1. Melt the butter in a saucepan over medium heat until it starts bubbling.
  2. Stir in the mushrooms and onions, and saute them until they soften and dry out, about 15 minutes.
  3. Stir in the flour, and saute for another 5 minutes.
  4. Pour in a bit of the stock, stir it vigorously until everything is incorporated, then add the rest.
  5. Add any extra seasonings you want. Reduce to medium low and simmer until it thickens, about 30 minutes.
