Mushroom filling

makes enough for 6 dumplings/buns

get
  • 2 cups shitake or cremated mushrooms, chopped
  • 1/2 onion (or shallot), chopped
  • 1/2 inch fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • pepper
do
  • heat the sesame oil over med heat "until it shimmers", then lightly caramelize the onion (or shallot) for 2 minutes.
  • add mushrooms, ginger, and garlic. cook and occasionally stir for 5 minutes.
  • add pepper and soy sauce and cook down until the mushrooms caramelize, about 2 minutes.
  • it's done.
might try adding chili sauce or hot peppers.
