Get: - 6-7 large carrots, peeled
- 2 garlic cloves, peeled
- 1tbsp dry oregano
- 1tsp cumin seeds
- 1tsp sweet paprika
- 0.5c sherry vinegar
- 0.5c water
- salt, olive oil, parsely
Do: - Boil the carrots "until tender" (?)
- Soak the carrots in cold water
- Slice carrots into 0.5cm coins
- Mash garlic, cumin, paprika, oregano
- Combine carrots, mashed spices, water, and vinegar in a jar. Carrots should be covered.
- Fridge at least 4 hours.
- Strain and serve with salt, oil, and parsley
