Moo's Spanish carrots

Get:
  • 6-7 large carrots, peeled
  • 2 garlic cloves, peeled
  • 1tbsp dry oregano
  • 1tsp cumin seeds
  • 1tsp sweet paprika
  • 0.5c sherry vinegar
  • 0.5c water
  • salt, olive oil, parsely

Do:
  • Boil the carrots "until tender" (?)
  • Soak the carrots in cold water
  • Slice carrots into 0.5cm coins
  • Mash garlic, cumin, paprika, oregano
  • Combine carrots, mashed spices, water, and vinegar in a jar. Carrots should be covered.
  • Fridge at least 4 hours.
  • Strain and serve with salt, oil, and parsley
