now with more Irish! enough for 3-4 people probably -- my rough estimate is 1 potato per person; about 30 minutes
- 4 small red potatoes
- 1/4 cup sour cream (optional)
- 1/4 cup butter (chopped into small chunks)
- 1 egg
- milk
- seasonings to taste (salt, pepper, garlic powder)
- Bring a pot of salted water (enough to cover the chopped potatoes) to a rolling boil.
- Peel and slice the potatoes into 4 to 8 pieces each, about 5cm.
- When the water is boiling, spoon the potato chunks in and boil them for 20 minutes.
- Drain the potatoes and dump into a large bowl.
- Add the butter, sour cream, egg, and seasonings, and mash it all together with a little metal masher or even a large spoon.
- After it becomes somewhat uniform, add milk to reach the thickness level you prefer.
