Get: - chorizo sausage, sliced
- 1 wedge Manchego cheese, sliced
- 1 loaf focaccia // Acme onion slab from Zanotto's works well
- kalamata olive, minced, to garnish / tapenade
- paprika
- butter
- tooth picks
Do: - slice the focaccia into 1" squares, 1cm thick
- saute focaccia squares in buttered pan on medium, similar to grilled cheese. Remove to baking tray.
- sizzle the chorizo slices on medium heat until slightly browned, about 1 minute.
- Place bread, chorizo, and sliced cheese in stacks on a baking tray
- Dash of paprika on each one
- Melt in the broiler, 2 mins on low
- Sizzle the cheese under a close hot broiler, about 30 seconds
- Serve with tooth pick and tapenade

- pickled onion
Results: - Simple but tasted fine
- Much less good once cooled
- Plain tapenade was not popular, add oil or spices
