Manchego & Chorizo Pepitos Bites

Get:
  • chorizo sausage, sliced
  • 1 wedge Manchego cheese, sliced
  • 1 loaf focaccia  // Acme onion slab from Zanotto's works well
  • kalamata olive, minced, to garnish / tapenade
  • paprika
  • butter
  • tooth picks
Do:
  • slice the focaccia into 1" squares, 1cm thick
  • saute focaccia squares in buttered pan on medium, similar to grilled cheese. Remove to baking tray.
  • sizzle the chorizo slices on medium heat until slightly browned, about 1 minute.
  • Place bread, chorizo, and sliced cheese in stacks on a baking tray
  • Dash of paprika on each one
  • Melt in the broiler, 2 mins on low
  • Sizzle the cheese under a close hot broiler, about 30 seconds
  • Serve with tooth pick and tapenade
Other garnish ideas:
  • paprika
  • green olive tapanade
  • date
  • pickled onion
Results:
  • Simple but tasted fine
  • Much less good once cooled
  • Plain tapenade was not popular, add oil or spices
