Makes maybe 4-6 servings.
Get: - 1 cup skim milk
- 8oz sharp cheddar cheese, grated
- 2 tbsp butter
- 1 tbsp flour
- spices: salt, pepper, thyme, sage, garlic powder
- 8oz (dry weight) macaroni; about half a box
Do: - Grate the cheese, set aside
- Cook macaroni to al dente. Drain and set aside.
- Preheat oven to 400F
- Lightly grease a 4x8 baking dish
- Microwave the milk on half power for 1 minute to warm it (mise)
- Melt butter in a small pan over medium-low heat
- Whisk in flour a bit at a time, sitirring constantly
- cook flour/butter mixture for 1 minute
- Whisk in 1cup warm milk, stirring constantly
- cook mixture for 5 minutes, stirring constantly
- add salt, pepper, thyme, sage, garlic powder
- Whisk in 1 cup of the cheese, stirring constantly. Reserve the rest of the cheese
- Whisk until cheese is melted
- Combine mixture with pasta
- Pour mixture into baking dish
- liberally coat the top with the remaining cheese
- Bake for 20 minutes at 400F "or until top is crispy"
Results: - Pretty yummy! The recipe called for more flour and more milk, both of which I cut in half. Seemed fine. The recipe also didn't call for any spice, so.... no.

OLD RECIPE
I didn't like the topping on this recipe. Way too much breadcrumbs, should just be cheese instead. The sprinkled cheese became rock-hard and gross on reheating.
1lb package of elbow macaroni, cooked and drained 3 cups grated sharp cheddar cheese 1.5 cups grated cheese (for topping) 16 Tablespoons butter (two sticks), melted 2 teaspoons salt dash cayenne pepper 1 teaspoon black pepper 2 large egg 1 cup cream 2 cups bread crumbs additional 8 Tablespoons (1 stick) butter
Directions - Combine 2 sticks (16tbsp) melted butter with salt, pepper, and cayenne in a large bowl and stir.
- Stir in macaroni, sprinkling 3 cups of cheese to coat. Layer into baking dish.
- Mix milk and egg together. Pour over the macaroni.
- Melt the additional 3 tablespoons of butter and combine with the bread crumbs.
- Spread the buttered bread crumbs over the top of the macaroni.
- Sprinkle the remaining 1.5 cups of grated cheese over the top
- Bake at 350 degrees for approximately 30 minutes, or until the egg and milk are thoroughly cooked and the top is brown
