careful: by my calculation, this is 100 proof when complete, more than a strong whiskey day 1- 2 lemons, cleaned & rinsed
- 750 mL of 151
- cheesecloth
- big 1L cannister with wide opening and tight seal
pour 151 into cannister. wrap lemons in cheesecloth, then suspend them from the top of the cannister. they shouldn't touch the liquid. seal up and put away in a cool, dark place for one month. day 31- 3/4 cup sugar
- 1.5 cup water
- cheesecloth
- 2 lemons, cleaned & rinsed
- (optional) 24 sprigs of rosemary, rinsed
combine sugar and water over heat into 50% simple syrup. peel zest from lemons. remove nasty old lemons from cannister, and dump in the zest, rosemary, and simple syrup. shake it all together and wait 15 minutes. strain through cheesecloth into fancy bottles and chill. june 2016 variantadd one initial day with the lemon zest only, then do day 32 with the rest. only use 12 sprigs of rosemary.
