Korean banchan (sprouts, cucumber, eggplant, radish)

Stir fried cucumbers

Get:
  • 1 pound Persian cucumbers (about 5, or English cucumber)
  • 1.5 tsp salt
  • cooking oil
  • 2-4 cloves minced garlic
  • 1 scallion, finely chopped
  • 1 tsp sesame oil
  • 1/2 tsp sesame seeds
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • red pepper flakes
Do
  • Cut the cucumbers in half lengthwise, and then thinly slice crosswise slightly diagonally. If the cucumbers are thin, you can simply cut into thin rounds.
  • Toss the cucumber slices with one and a half teaspoons of salt to coat evenly. Let sit for 5 minutes.
  • Squeeze as much water out from the cucumber slices as possible. Don’t worry about bruising them. They will recover when stir-fried.
  • Heat a pan over medium heat, and toast sesame seeds, tossing occasionally until brown. 5 minutes.
  • Increase temperature to high heat, add 1 tbsp cooking oil.
  • Add the garlic, pepper, and red pepper, and toast in the oil for a minute or two.
  • Add the cucumbers and stir-fry for no more than 1-2 minutes, until the cucumbers are slightly cooked.
  • Turn off the heat. Toss well with the scallion, sesame oil, lemon juice, and sesame seeds.
Results:
  • Not too salty once done! I thought for sure it would be way too salty but it mellows out.
  • Tasty!

Bean Sprouts

Get:
  • 1 pound sukju namul mung bean sprouts
  • 1 scallion finely chopped
  • 1 teaspoon garlic
  • 1 tablespoon sesame oil
  • 1 teaspoon sesame seeds
  • 1 tsp (a splash) of rice vinegar
  • salt about 1 teaspoon and pepper to taste
Do:
  • Rinse the bean sprouts twice in cold water.
  • Boil 4 cups of water, in a medium size pot, along with a teaspoon of salt.
  • Drop in the sprouts and cover. Blanch the sprouts until slightly softened, about 1 minute.
  • Drain quickly, and rince with cold water.
  • When cool enough to handle, gently squeeze out the excess water.
  • Toss well with the remaining ingredients. Sample and add more salt to your taste if needed.
Results:
  • A little under-salted?
  • The black pepper and sesame oil flavor was nice.
