Hush puppies (baked)

  • 2/3 cup yellow cornmeal
  • 1/3 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup finely chopped onion
  • 1/3 cup milk
  • 2 large eggs, lightly beaten
  • 2 tbsp melted butter
  1. Melt the butter.
  2. In a medium bowl, combine dry ingredients: cornmeal, flour, baking powder, salt, pepper.
  3. In another medium bowl, combine wet ingredients: onion, milk, eggs, melted butter.
  4. Fold the wet into the dry, only until moistened.
  5. Spoon 2 tbsp batter into each muffin-hole of a greased 12-muffin tin.
  6. Bake at 450F for 10 minutes until the "hush puppies" are firm to the touch and golden brown at the edges.
