- 2/3 cup yellow cornmeal
- 1/3 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1/8 tsp pepper
- 1/2 cup finely chopped onion
- 1/3 cup milk
- 2 large eggs, lightly beaten
- 2 tbsp melted butter
- Melt the butter.
- In a medium bowl, combine dry ingredients: cornmeal, flour, baking powder, salt, pepper.
- In another medium bowl, combine wet ingredients: onion, milk, eggs, melted butter.
- Fold the wet into the dry, only until moistened.
- Spoon 2 tbsp batter into each muffin-hole of a greased 12-muffin tin.
- Bake at 450F for 10 minutes until the "hush puppies" are firm to the touch and golden brown at the edges.
