Do: - 1 lb of jumbo shrimp, rinsed.
- Marinate in butter, lime juice, chardonnay, salt, pepper, garlic, shallot. Go light on the salt since the bacon is salty.
- Fry about half lb thin cut bacon, not crispy.
- Slice bacon longways in half, then again for a total of 3-4 strips of bacon per slice. strips should go around the girth of the shrimp just a bit more than once.
- Wrap each shrimp in a bacon strip.
- Skewer wrapped shrimp to hold bacon.
- Repeat. You can press the shrimp together pretty good.
- Grill 2 mins per side.
Results: - I cooked the shrimp for too long, like 6 mins, and they were tough. I'm also not sure I loved the wine taste.
- Otherwise good.
- Another time I baked the shrimp doused in melted butter and garlic. 425 (really 400ish) for 10 mins. That was perfect.
