Beef, lamb, or chicken kebobs. Serve with veggie medley and couscous. Get: - chicken thigh, beef top sirloin, or lamb chop (0.5lbs-ish per person)
- red bell pepper (1 per 4-6 people)
- green bell pepper (1 per 4-6 people)
- red onion (1 per 6-8 people)
- wood skewers, or use our steel skewers
- olive oil
Do: - slice meat into ~1in cubes
- brine meat for 2 hours (1.5c water per 1tbsp kosher salt)
- soak wood skewers in water, if using wood
- coarsely chop pepper and onion into 1in squares
- rinse meat, pay dry, lay out, coat meat in olive oil?
- season with pepper and lemon (NOT salt)
- skewer meat - onion - pepper - onion - meat onto pairs of skewers
- grill chicken for 15 minutes, to temperature (160F)
- grill beef for 10-12 minutes, 5-6 min per side
Results: - The chicken stuck to the grill. Next time brush/soak with oil.
- I didn't taste the beef. Robey said it was salty but not too salty.
- The beef looked like it was done to about medium at 12-14 minutes. Should have done less time.
- The chicken was cooked through perfectly well at 15 minutes.
