Not yet attempted: "firm tofu" From Morgan: Crispy tofu nuggets Press tofu in a towel under something heavy (I use a cast iron pan) for 30minutes or more. Just get it free of a bunch of water but don’t go too dry. Well, if you go dry, you can always infuse it with flavor and make it even better. But mostly dry with some moisture inside. Cube it up. I guess about 1”-2”? Toss in some cornstarch, shake the excess cornstarch off. This is going to give you a nice little crust. Pan fry it till golden brown. Usually I do this over medium with about 2 tablespoons of neutral oil. I tend to use tongs to help make sure the flipping is good. If you’re pro, bust out those chopsticks. Drain the nuggets of win on a towel. Good luck not eating the lava pockets right away. Toss in your favorite sauce. |
