Deviled eggs

Get:
  • 6 Eggs
  • 0.25cup mayonnaise
  • 1tbsp spicy mustard
  • 2tbsp dill pickles, minced (or relish)
  • 1tsp white wine vinegar
  • spices to taste (try starting with 1/4tsp each of salt, pepper, garlic powder, onion powder, paprika)
Prepare the eggs:
  • Place eggs in pot of cold water
  • Bring to rolling boil (hi/medium high). Don't plunge eggs in boiling water since it makes them crack
  • Reduce heat to low and cover for 12-15 minutes
  • Remove to cold water, replace cold water several times to chill
  • Peel over trash once merely warm
  • slice eggs in half carefully, plate halves and put yolks in a bowl
  • slicing tip: find the dark side where the yolk has settled to the bottom, and slice so that that's the bottom of one side. (that way there won't be one visibly thin side.)
Fill the eggs:
  • combine yolks, mayo, spicy mustard, pickles, vinegar, and spices. A little too salty is okay. The quantities above are starting points, you'll have to tune.
  • Place mixture into cooked white halves
  • Carefully pinch paprika powder onto the tops of the mixture (garnish)
  • Fridge and serve
Sriracha ginger variant:
  • make as above, but put sriracha in addition to mustard
  • garnish with pickled ginger
Egg salad tea sandwiches:
  • Chop hard-boiled eggs (white+yolk) with a knife, or finely chop with a blender for fancy smoothness
  • Make mix as above, you'll need more salt and vinegar and mayo
  • Cut crusts off of a very fresh white bread
  • Smoosh mix onto sandwiches and serve

Results:
  • tasty! but controversial. it's easy to put on too much ginger. I tried to cut little loops so that the ginger would stand on its own.
  • the sriracha flavor is strong so it will cover most of the rest of it.
