Cucumber Maki

Get:
  • 1c short grain rice, dry
  • 1tbsp rice vinegar
  • 1tbsp sugar
  • 0.5tbsp salt
  • Fresh cucumber
  • Nori sheets
  • Wasabi, ginger, and soy sauce to garnish
Do:
  • sushi rice:
    • rinse 2c rice
    • boil the wet rice in equal parts water, then cover and steam on low heat for 15 minutes.
    • let stand for 10 more minutes
    • combine rice vinegar, sugar, salt in a bowl and microwave 30-40sec
    • fold mixture into rice, cool mixture to room temperature
  • maki:
    • thinly slice cucumber
    • lay out nori sheets on sushi mat, coat with ~0.5cm rice. leave 2cm edge uncovered for closing
    • lay cucumber near edge of rice area, roll using mat
    • slice with a sharp wet knife, wiping the blade with a moist towel after each slice

Results:
  • I made the rice too dry. Need to make sure to use lower heat and steam for at least the 15+10 minutes.
  • Remember to lay out the nori in the right direction r.e. the perforations
