Get: - 1 lb bacon, chopped
- 4 lbs chicken thighs and drumsticks, whole, bone-in
- 1 yellow onion, chopped
- 4 cloves garlic, chopped
- 2 shallots, chopped
- 0.25c cognac (I used brandy)
- 1c chicken stock
- 2c red wine (supposed to use burgundy or pino noir, i used syrah)
- thyme, salt, pepper
- serve with rice
Do: - Fry bacon in large skillet, then set aside
- Season chicken with a little bit of salt, lots of pepper, thyme
- Place chicken in bacon grease, brown on all sides, 5-10 minutes
- Combine onion, shallot, garlic, chicken, and bacon in slow cooker
- Add wine, cognac, and chicken stock
- Cook on low for 4 hours
- Set chicken aside
- Ladle liquid into fry pan, reduce with flour until "coats the back of a spoon"
- Serve with rice

Results: - flavor was good although a touch bland. Could use a little more salt, a lot more pepper and thyme
- chicken was still somewhat dry; less time or less heat next time.
- If i cared, i would perhaps brine the chicken first
- Nice flavor from the bacon, but wish i could use something else next time with less nitrates / preservatives
