Get: - 350g chicken thighs (3/4 lbs)
- 1/4c fresh cilantro leaves minced, large stems removed
- 4-5 garlic cloves, minced
- 1 lemon, juiced
- 4 tbsp olive oil
- Spices: dried chili powder, dried cilantro, cumin, cayenne, black pepper, salt (also supposedly dried spearmint and dried lemon peel)
- Serve with: couscous, dried apricots, etc
Do: - Brine chicken thighs (1-2 hours, 1/2tbsp salt per cup water)
- Combine olive oil, lemon juice, 1tbsp spice mixture (?), minced cilantro leaves and minced garlic into a marinade paste
- Cut chicken into double-skewerable pieces, 3-4cm strips-ish
- Marinate the chicken pieces for 1-12 hours
- Skewer the chicken
- Place on broiling rack for 4-5 minutes per side, cook to 160F. 6-8 inches below flame
Results - Broiler worked amazingly well as a grill! Just don't get too close.
- Cilantro doesn't taste like fresh anymore, so its not soapy
- Very lemony, but tasty / works
- I have no idea what this spice mix actually is since it came from a "Piquant Post" packet, so this is just a guess for next time.
