Get: - 63g dark chocolate chips
- 2 floz milk or half-and-half
- ground chocolate or cacao nibs (toppings)
Do: - Warm milk to 200F
- Gently stir milk into chocolate chips in a flat-bottomed bowl to melt and mix
- Chocolate should be a little bit drippy, "like pudding", not too firm that it won't dribble.
- Freeze to set until firm to the touch, shiny. Not hard or frozen.
- Portion into 1tbsp balls (1 inch)
- Roll truffles by hand, put center inside, or roll in topping.
Hot chocolate - 1.25c milk
- 0.75c ground chocolate
- double-boil half the milk until steaming
- whisk in the chocolate
- whisk in the rest of the milk
