Chocolate truffles

Get:
  • 63g dark chocolate chips
  • 2 floz milk or half-and-half
  • ground chocolate or cacao nibs (toppings)

Do:
  • Warm milk to 200F
  • Gently stir milk into chocolate chips in a flat-bottomed bowl to melt and mix
  • Chocolate should be a little bit drippy, "like pudding", not too firm that it won't dribble.
  • Freeze to set until firm to the touch, shiny. Not hard or frozen.
  • Portion into 1tbsp balls (1 inch)
  • Roll truffles by hand, put center inside, or roll in topping.

Hot chocolate 
  • 1.25c milk
  • 0.75c ground chocolate
  • double-boil half the milk until steaming
  • whisk in the chocolate
  • whisk in the rest of the milk
