beef turkey
- 1 tbsp bacon drippings (if you have any handy -- it deepens flavor)
- 1/2 c onions, chopped
- 1 tsp cumin
- 1 tsp salt
- 1 tsp oregano, powdered
- 1 tsp cayenne
- 2 quartered cloves garlic
- 1 c broth
- 1/3 c chili powder
- bit of tomato sauce (~ half of an 8oz can)
- 1 can black beans, drained (optional)
- 1-2 cloves minced fresh garlic
- 1/4 square bittersweet chocolate, chopped/shaved
Brown beef turkey and onions in bacon fat over medium-high heat. You can drain it, but unless it's just absolutely swimming in grease I usually don't (fat holds the fiery pepper heat!). Add seasonings, broth, and tomato sauce. Cover and reduce heat, simmer ~2 hours. Stir in can of beans, if using. Simmer 30 more minutes. Add fresh garlic and chocolate bits just before serving -- stir into hot chili until chocolate melts in. **Yummmmm**...we eat with baked crescent rolls from Pillsbury. It's mellower and richer the next day. Delicious! [I made this in a crock pot, and made little cornbread muffins instead of croissants. The crock pot can easily fit double this recipe, though it's very liquidy. The broth can probably be reduced (I'd say use 1/2 cup instead) when cooked this way. Also I skip the beans cuz this is a chili for carnivores!!! -robey] |
