Roast potatoes confit

Get:
  • lard (i'm using thanksgiving turkey fat)
  • small new potatoes, whole and washed
  • 10 cloves garlic
Do:
  • Salt and season the potatoes
  • Melt the fat or oil in roating pan
  • Add the potatoes
  • Roast at 225F for 3ish hours
  • Pick out the potatoes
  • Fire under broiler for 2-3 minutes

Results:
  • Tried this with chicken, 200F for 3 hours, oil temp 190F-199F
  • The chicken meat was dry and gross, tho people said the wings / skin were good
  • The potatoes were really good! They needed salt but otherwise tasty
