Get: - lard (i'm using thanksgiving turkey fat)
- small new potatoes, whole and washed
- 10 cloves garlic
Do: - Salt and season the potatoes
- Melt the fat or oil in roating pan
- Add the potatoes
- Roast at 225F for 3ish hours
- Pick out the potatoes
- Fire under broiler for 2-3 minutes
Results: - Tried this with chicken, 200F for 3 hours, oil temp 190F-199F
- The chicken meat was dry and gross, tho people said the wings / skin were good
- The potatoes were really good! They needed salt but otherwise tasty
References: - Chicken - 300F, two hours. "oil should barely bubble, adjust heat as necessary"
- Duck - 225F, two to three hours. "slow simmer, just an occasional bubble"
- Meat - fat temp at 190F, few bubbles, "several hours"
