From mom, this horrifying recipe: This makes 3 cups of slaw, so you can adjust accordingly: 1 lb. grated hard/aged Swiss cheese (use a large grate - it should look like coarsely grated cabbage) 3 or 4 green onions - chopped fine with some of the green tops included 1/2 cup finely chopped sweet yellow banana peppers or sweet red pepper or a mix of both 1/2 cup seeded and finely chopped green jalapeno peppers (if you use canned peppers, drain them well and remove as many seeds as you can) 1/2 cup mayonnaise (not Miracle Whip) Gently mix it all together so the cheese doesn't get too crumbled (it really should look like coarse cole slaw) and let sit at least overnight to blend flavors. Will keep for a week or so in the fridge if it is well covered. Serve with Dorito or Frito "Scoops" chips - put a spoon in the slaw to scoop it into the Dorito chips or it will break the chips. Fritos hold up as scoops fairly well! One of my friends makes her own thick tortilla triangles to go with it, but that is a LOT of trouble when the chips are yummy with it!
