EASY MODE
Get: - garam masala
- 1 can diced tomato (fire roasted)
- 2 cans garbonzo beans
- green chilis
- ginger powder
- onion powder
- garlic powder
Do: - fry one heaping tablespoon of garam masala in oil
HARD MODE
Get: - 1 tsp cumin seed
- 1/2 tsp coreander seeds
- 1/2 tsp mustard seeds
- 1/2 tsp fenugreek seed
- 1 black cardomom pod
- tin bit of cinnamon
- 1 yellow onion
- 1 serrano chili, de-seeded if desired
- garlic
- ginger
Do: - toast dry spices on medium, and blend to powder
- mince 1 yellow onion
- de-seed and mince the serrano
- mince the garlic
- heat 3 tbsp ghee + olive oil
- simmer the garam maslaa and turmeric in the oil
- add garlic
ACTUAL
Get:- 1 tsp cumin seed
- 1/2 tsp mustard seeds
- 1/2 tsp fenugreek seed
- 1 can diced green chilis
- 1 green cardomom pod
- tiny bit of cinnamon stick
- 1 yellow onion, chopped
- 1 serrano chili, de-seeded if desired, and minced
- 4 cloves garlic, minced
- 1 tsp powdered ginger
- ?? turmeric??
- fresh cilantro, minced
- 1 can diced tomato (fire roasted)
- 2 cans garbonzo beans
- 1 tbsp lemon juice
- some salt
- some brown sugar, 1 tbsp
Do: - toast dry spices on medium, until you can smell them and blend to powder
- heat 3 tbsp ghee + olive oil on medium
- simmer the garam maslaa and turmeric in the oil until fragrant
- add salt
- add garlic
- add onion
- sautee to brown ingredients
- add tomatoes and green chilis with liquid and simmer for "a while"
- puree this mixture
- combine with garbanzo beans
- simmer indefinitely on low
- add lemon, cilantro, sugar, and salt to taste
Results: - pretty good! No problem adding salt and lemon at the end
- too much cardomom, go lighter on that next time
- not enough heat, could use cayenne or more serano seeds
- maybe simmer longer? no melding time
- garbonzo bean texture is wrong, definitely too firm from the can. use real chana? or simmer longer?
