Basic bread

This is the simplest bread recipe.
  • 1 1/2 cups warm water
  • 1/2 tbsp yeast
  • 1 tbsp salt
  • 1 lb (3+ cups) bread flour
  1. Dump all ingredients into the mixing bowl. Keep the salt on the other side from the yeast at first.
  2. Use the kneading hook to mix and then knead at level 2 for 5 minutes.
  3. Cover with a damp towel and set aside to prove for 2 hours.
  4. (You may dump it in the fridge at this point, to continue later.)
  5. Form it into a ball by stretching, leek-style, and let it rest for another hour.
  6. Preheat oven to 450F.
  7. Slash the top of the loaf, sprinkle it with rock salt, and put it on parchment paper in a loafish shape.
  8. Pour 1 cup water into a tray and stick it at the bottom of the oven. It makes the crust form better.
  9. Bake for 20 minutes on the parchment paper, then remove the paper to let the bottom crisp up, and bake for another 10 - 15 minutes.
  10. Cool on a rack for 15 minutes.
