This is the simplest bread recipe. - 1 1/2 cups warm water
- 1/2 tbsp yeast
- 1 tbsp salt
- 1 lb (3+ cups) bread flour
- Dump all ingredients into the mixing bowl. Keep the salt on the other side from the yeast at first.
- Use the kneading hook to mix and then knead at level 2 for 5 minutes.
- Cover with a damp towel and set aside to prove for 2 hours.
- (You may dump it in the fridge at this point, to continue later.)
- Form it into a ball by stretching, leek-style, and let it rest for another hour.
- Preheat oven to 450F.
- Slash the top of the loaf, sprinkle it with rock salt, and put it on parchment paper in a loafish shape.
- Pour 1 cup water into a tray and stick it at the bottom of the oven. It makes the crust form better.
- Bake for 20 minutes on the parchment paper, then remove the paper to let the bottom crisp up, and bake for another 10 - 15 minutes.
- Cool on a rack for 15 minutes.
