I got this idea from a restaurant in Tennessee, not yet attempted.
Get: - fresh thick sliced bread
- avocado
- microgreens
- pickled red onion
- thinly sliced jicama?
- TODO: liquid avocado somehow?
- Thinly sliced fresh beet (blanched? raw?)
Do: - Pickle red onions, slice thinly
- Make some kind of pretty watery avocado sauce (?)
- Toast the bread slice
- Slice avocado, not mash, place on bread open-face
- Adorn sandwich with jicama, beet, onion, microgreens
- top with avocado sauce and serve
