A meal: grilled lamb rib chops

Get
  • 1/5 lb chops per person (roughly 2 pairs per person)
  • green beans
  • garlic
  • butter
  • olive oil
  • dry rosemary
  • salt
  • pepper
  • potatoes (to smash)
  • 2 large shallots
  • 1 lb mushrooms
  • white wine
  • 2 cup chicken broth
  • corn starch
Do
  • Marinate:
    • cut chops apart, one bone per piece
    • Mix 1/2 cup olive oil with minced garlic, rosemary, salt, pepper
    • Coat chops in mixture, lay in pan, refrigerate
    • turn after 30 minutes
  • Mushroom dressing
    • chop shallot, soften in pan on medium heat with butter
    • add chopped mushrooms, mix
    • add 1 cup wine
    • cook on medium heat to reduce
    • once reduced, add chicken broth and reduce further
  • Green beans:
    • cut ends off of green beans
    • saute in butter
    • salt, pepper, rosemary
  • Potatoes:
    • clean and chop potatoes
    • cut out eyes
    • boil 20 minutes
    • smash with butter and milk
  • Lamb
    • Grill 2.5 minutes per side for medium rare
