Get - 1/5 lb chops per person (roughly 2 pairs per person)
- green beans
- garlic
- butter
- olive oil
- dry rosemary
- salt
- pepper
- potatoes (to smash)
- 2 large shallots
- 1 lb mushrooms
- white wine
- 2 cup chicken broth
- corn starch
Do - Marinate:
- cut chops apart, one bone per piece
- Mix 1/2 cup olive oil with minced garlic, rosemary, salt, pepper
- Coat chops in mixture, lay in pan, refrigerate
- turn after 30 minutes
- Mushroom dressing
- chop shallot, soften in pan on medium heat with butter
- add chopped mushrooms, mix
- add 1 cup wine
- cook on medium heat to reduce
- once reduced, add chicken broth and reduce further
- Green beans:
- cut ends off of green beans
- saute in butter
- salt, pepper, rosemary
- Potatoes:
- clean and chop potatoes
- cut out eyes
- boil 20 minutes
- smash with butter and milk
- Lamb
- Grill 2.5 minutes per side for medium rare
