By Rus This was my first attempt with green onions instead of red, but now I'm never going back. The quantities described here make a small batch, enough for tacos for 3-4 people, or for a modest bag of chips. This is a raw salsa and it's very simple, so it's pretty easy. Spices:- Chili powder
- Cayanne powder
- Salt
- Black pepper. I like fresh ground pepper from a mill
Ingredients:- 3 roma tomatoes, finely diced
- 4oz diced green chilis. I used canned "La Victoria fire roasted mild green chilis"
- 2 tbsp finely minced cilantro
- 4 green onions
Preparation:- Slice the green onions into quarter-inch thick discs. Only use the white and light green parts, don't bother with the dark green parts
- Finely chop the tomatos
- Finely mince the cilantro
- Combine the canned chilis, tomatoes, green onion, and cilantro in a bowl and mix
- Liberally salt, to taste. Remember salsa is meant to be flavorful, so its okay if it's salty; usually its going on something bland anyway
- Dash of black pepper
- Liberally dust with the chilli powder, maybe 1tsp worth
- Dash of cayanne, to taste. I just use a tiny pinch since there's some heat in the green chilis
- Mix all ingredients and adjust to taste with the salt and chili powder
- Let stand until ready to serve. The longer you let it stand, the better the onion flavor will combine into the salsa. Remember to stir it a couple times before serving.
